North Pole Peppermint Cookies

This cookie recipe is the perfect dessert for any holiday get-together! Developed around Scamps Toffee's North Pole Bark, this dessert gives you a slight kick of peppermint that is refreshing and delicious and is the winning recipe for our Winter Recipe Challenge!

Cook time: 7-9 minutes
Serving Size: 2 cookies
Total Servings: 24 cookies


Ingredients:

  • 1/2 cup of butter
  • 1/2 cup of margarine
  • 1 cup of white sugar
  • 1 cup of brown sugar
  • 2 eggs
  • 1 tsp of vanilla
  • 2 cups of flour
  • 2 1/2 cups crushed oatmeal (use food processor)
  • 1/2 tsp of salt
  • 1 tsp baking powder (a pinch more for softer cookies)
  • 1 tsp baking soda
  • 12 oz of Scamps North Pole Bark (add more if desired)
  • 4 oz grated Hershey chocolate bar


Directions:

  1. Cut your North Pole Bark into 1/4 inch pieces.
  2. Mix together butter, margarine, white sugar and brown sugar.
  3. Add eggs and vanilla to the sugar/butter mixture.
  4. In separate bowl, mix the flour, crushed oatmeal, salt, baking powder and baking soda.
  5. Once fully mixed, combine this dry mixture with the wet sugar/butter mixture and the chopped North Pole Bark and grated chocolate.
  6. Make golf-ball size cookies and flatten slightly.
  7. Place on parchment paper on cookie sheet.
  8. Bake at 350 degrees until browning starts. (Approximately 7-9 minutes.)
